APPLE-PORK CHOP BAKE
4 pork shoulder chops (5-ounces each), ½ teaspoon salt, divided ¼ teaspoon each pepper, divided, and ground sage 2 teaspoons vegetable oil ½ cup diced onion 12 ounces yams, parboiled, peeled, cut into ¼-inch-thick slices 2 small apples, cored, pared, cut into ¼-inch-thick wedges ½ cup water On rack in broiling pan broil pork chops, turning once, until rare. Sprinkle chops with ¼ teaspoon salt, 1/8 teaspoon pepper, and the sage; set aside. Preheat oven to 350-degrees. In small skillet heat oil; add onion and sauté until translucent. Spread sautéed onion over bottom of shallow square 2-quart casserole; top with sliced yams and sprinkle with remaining ¼ teaspoon salt and 1/8 teaspoon pepper. Top yams with apple wedges, then pork chops; add water and cover casserole. Bake for 45 minutes. Remove cover and bake until pork is fork-tender, about 15 minutes longer.
Condition: Overall good condition … non-toned pages are in very good condition with no spots, no tears, no writing … tight to binding, no bumped corners. Front and back of book’s covers are clean with no spots or writing. There is a spot on bottom page edges, visible when book is closed. Dust-jacket is in mostly-good condition EXCEPT the top edge area only, front and back, show wear/crinkling/small tears. Front of dj also has a 3.00 sticker, indicating the price Mom paid for it at a yard sale years ago. This is NOT a book club edition … original price of $17.95 has not been price-clipped from dust jacket flap, so you know the inside pages are quality.
