From Foreword:
Less than a year ago we issued a cook booklet containing twenty-four new uses for Rumford in everyday dishes which ae greatly improved by the use of this all-phosphate baking powder.
This new use of baking powder in cooking proved an interesting novelty for the majority of women, and the new idea struck a popular chord. Women quickly found that the use of Rumford in omelet, tomato bisque, cheese soufflé, stewed prunes, and many other foods greatly improved both their appearance and flavor.
The demand for the little cook book became so great that more than a MILLION COPIES have been printed in the last few months. Not only that, but interested women have sent us from all parts of the country over six hundred additional suggestions and recipes for the use of Rumford in cooking.
These suggestions have all been carefully tested in our laboratory kitchen by an expert cook and dietitian, and forty of the most successful and pleasing are included in this new and enlarged edition. They are given on the following pages, together with the original introduction and the twenty-four new uses which accompanied it.
We hope that you may derive as much benefit and pleasure from this new edition as have a million women from the old one.

SEAFOAM
2 cups brown sugar
1 cup water
1 tablespoon vinegar
1 tablespoon butter
2 egg whites
2 teaspoons Rumford Baking Powder
1 cup chopped walnuts
Mix sugar, butter, water and vinegar together and cook (248-degrees F.) until it forms a hard ball when dropped in cold water. Remove from fire, and add slowly to stiffly beaten egg whites, beating continuously with rotary egg beater. Then add baking powder, vanilla and chopped nuts. Beat until creamy and stiff. Turn into buttered pan or drop by spoonfuls on oiled paper.
MILK POP
When children do not want their milk, as children so often do, give them a change by adding ½ teaspoon of Rumford Baking Powder, 1 teaspoon of sugar and a few drops of vanilla, or a teaspoon of chocolate syrup to a glass of milk. Stir or shake well. This adds food value as well as being a change.
